I grew up in a home with a working mother where Hamburger Helpers were a staple… we ate them three or four times a week. As I became an adult and later a parent, cooking still was not a strong point of mine. I was a single mom and a corporate business women so I justified the nutrition deficite in our household. I didn’t serve Hamburger Helpers but….. The Schwan’s delivery truck knew our standard order which always took care of breakfast and lunch. Dinner was a whole different story. It was fast food until he was containable at a sit-down restaurant. My son could tell you all the awesome mom and pop restaurants within fifteen miles of our home.
Then “IT” happened Barrett’s Esophagus. People with Barrett’s Esophagus are 50X or More Likely To Develop Esophageal Cancer. The five-year survival rate of people with esophageal cancer is about 17%, and this was all because of my lifestyle and food choices.
So changes began right away. Bye, bye Schwan’s! Bye, bye my beloved fast food and restaurants hello cooking classes! I loved this new life and creating these fabulous healthy but tasty foods and have been happily creating for over a decade. Then I was introduced to food storage.
Oh my goodness was that scary to me! The shelves and shelves of things I could NEVER call healthy all for the sake of having emergency food. Well, because the emergency food storage people had to rotate, that food has become part of their daily diet to avoid thousands of dollares in waste as expirations come due. But me? No way, not me, it was not an option. I’d have to do better.
I have spent years reading and trying recipes, tweaking and twisting my favorite recipes to create my food storage (food storage basics). One year worth of food storage for a family of 4 fits neatly into 24 copy paper boxes and 30 days of “oh my gosh ” emergency food for (4) fits in my backpack and weighs about 20 pounds.
I am now out of the corporate world and work with Special needs children. The rewards are wonderful, but I spend many hours away from home, so cooking a meal when I return doesn’t sound inviting. Thats where my food storage plan is great is great its all my healthy meals pre-packaged just add WATER and wala great tasty meal in 15 minutes. On my days off I still cook as normal thats when I try new recipes that I might want to add to my food storage. So you never know whose recipe I am dissecting this week to try and add new recipes.
